In our house, cookies tend to be more of an emergency as opposed to a well-thought-out plan. That’s why I love this recipe, it’s simple and comes together quickly, and yet the smokey element makes it seem extra special, like a favourite treat from the local bakery. Once you purchase the smoked sea salt, you’ll likely have all the other ingredients on hand to make whenever the craving strikes. Preheat oven to 350 degrees F. Grease cookie sheets.
In a large bowl, beat butter and sugars until light and fluffy. Beat in egg, and stir in vanilla extract. In a separate bowl combine flour, cocoa, baking soda, and salt. Gradually stir flour mixture into butter mixture. Add chocolate chips.
Drop spoonfuls of dough onto prepared baking sheets and bake for 12 to 15 minutes. Allow cookies to cool for 5 minutes before moving and sprinkling with extra smoked sea salt.
